Mini Chicken Nut Ball Appetizers

   In a mixing bowl, add chicken and, using two forks, break apart.

   Add softened cream cheese and sour cream, stir to combine.

   Add chopped chives, lemon zest and juice, and black pepper.

   Stir well.

   On a plate, add crushed cashews.

   Scoop some chicken mixture, roll into a mini ball, then roll in crushed cashews.

   Repeat with remaining ingredients.

   Cover with plastic wrap and refrigerate until ready to serve.
