Brush with butter, and arrange seam sides down on parchment-lined baking sheets.

Freeze (uncovered) until firm, about 1 hour.

Transfer to airtight containers, and freeze until ready to use, up to 6 weeks.

To serve, preheat oven to 425F.

Place logs on parchment-lined baking sheets; bake, rotating sheets halfway through, until golden brown and crisp, 12 to 15 minutes.
