Middle Eastern Zucchini Fritters – a delicious recipe with Zucchini, Onion, Garlic, Eggs, Cumin, Salt. Easy to follow and perfect for any occasion.

Grate zucchini and then place in a clean tea towel.

Squeeze all liquid out of zucchini and place in a bowl.

Add to bowl the onion (finely diced) and the garlic (minced).

Then add the remainder of ingredients except the oil.

Mix together very well.

You may need to add more flour to be sure the mixture is bound together well.

The consistency should be thick but not stiff.

Add oil to a nonstick skillet and place over medium-high heat.

When oil is hot, use an ice cream scoop to drop mixture into pan and then flatten with a fork.

Fritters should only be flipped once so wait until the first side is a dark golden brown before flipping and browning the other side.

Remove from skillet to a paper towel lined plate to drain any excess grease.

Fritters are delicious on their own or can be served with hummus or a tzatziki sauce and nice thick slices of tomato.
