Add the garlic, ground coriander, oregano, chile powder, and bay leaf, stirring until fragrant, about 30 seconds.

Add the tomatoes and the chipotles, increase the heat to high, and cook for 2 minutes, until thickened.

Add the broth and noodles to the skillet and season with salt and pepper to taste.

Bring to a gentle simmer, lower the heat and cook for 5 minutes, breaking up the noodles with a spoon.

Stir in the turkey.
