Ingredients: 1 tomatillo Salsa (see recipe on my profile); 4 oz cream cheese, room temperature, whisked smooth; 8 oz grated cheese (I use Cotija from the Mexican Store); 1 zest of 1 lime; 2 to 3 teaspoons green jalapeno sauce (I use poblano); 1 salt to taste; 1 pepper to taste; 1/4 cup cilantro leaves; 1/4 cup chopped toasted almonds; 2 green onions, cleaned, cut into very thin rounds, rinsed and dried

Servings: persons

1 tomatillo Salsa (see recipe on my profile)
4 oz cream cheese, room temperature, whisked smooth
8 oz grated cheese (I use Cotija from the Mexican Store)
1 zest of 1 lime
2 to 3 teaspoons green jalapeno sauce (I use poblano)
1 salt to taste
1 pepper to taste
1/4 cup cilantro leaves
1/4 cup chopped toasted almonds
2 green onions, cleaned, cut into very thin rounds, rinsed and dried

Make tomatillo salsa.

Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.

In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeno sauce.

Season to taste with salt and pepper.

Place in refrigerator to chill for 20 minutes.

In a separate bowl, mix cilantro and almonds together.

Remove cheers from refrigerator and form it into a large ball.

Coat the ball evenly with the cilantro/almond mix.

Wrap in plastic wrap and chill until serving.

Serve with your favorite crackers, crudites, etc.
