Ingredients: vegetable oil cooking spray or vegetable oil; ¼ cup mayonnaise; 3 tablespoons sour cream; 3 tablespoons cilantro leaves, minced; 1 garlic clove, minced (or pressed); ¾ teaspoon chili powder; ¼ teaspoon ground black pepper; ¼ teaspoon cayenne pepper (optional); 4 teaspoons lime juice (about 1 lime); ½ cup romano cheese, grated (about 1 oz.); 4 teaspoons vegetable oil; 6 ears corn, husks and silk removed; ½ teaspoon salt

Grill corn over coals, turning occasionally, until lightly charred on all sides, 7 to 12 minutes total.

Turn all burners to high and heat grill with lid down until very hot, about 15 minutes Scrape and oil grate.
