BEAT egg white in medium bowl with electric mixer on high speed until stiff. Whisk buttermilk and egg yolk in a separate bowl until blended.

MAKE a well in center of flour mixture. Add shortening and buttermilk mixture, stirring until thoroughly moistened. Stir in chocolate chips. Fold in beaten egg white.
