Mexican Casserole

   Heat the oven to 350.

   Mix all of the ingredients together (except the cheese)

   Pour into a sprayed casserole dish.

   If the dish looks a bit too dry for you add a bit of broth or some more salsa.

   Cover with the cheese.

    Cover the dish and cook for about 40 minutes then uncover it and cook it for another 15 minutes or so.

    I serve this topped with lettuce, light sour cream, hot sauce and salsa (like a salad on top of the casserole).
