Preheat oven to 375F.

Spray a 9-by-13-inch pan with nonstick cooking spray.

Chop the onion.

Put the oil in a skillet over medium heat.

Add onion to skillet, cooking till its soft and translucent.

Remove the casings from the sausage, and once the onions are soft, crumble the sausage into the skillet and cook until brown.

(While meat is browning, put on a pot of water to boil for the gnocchi.)

When the meat is browned, remove the mixture to a bowl and set aside.

Return the skillet to the stove, and use it to wilt the spinach.

Add the spinach and stir for a minute or so.

Once spinach is wilted, combine it with the meat mixture.

When the water is boiling, cook the gnocchi according to package directions, then drain.

Add the spaghetti sauce to the reserved meat mixture in the bowl, along with the gnocchi, then transfer the mixture to the baking dish.

Top with mozzarella, then grate some Parmesan over the top.

Put in the oven and bake for about 20 minutes, or until bubbling and the cheese is as brown (or not) as you like it.

You could also add other veggies zucchini might be good and you can use whatever kind of ground meat or sausage you like.
