Preheat oven to 350u00b0F. Lightly grease and line an 8 inch round cake pan with parchment paper.

Cream butter and sugar until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Fold in flour alternately with 1/2 cup milk, beginning and ending with flour. Divide mixture into 3 separate bowls. Mix cocoa powder and remaining milk into 1 bowl, food coloring into second bowl and leave third bowl plain. Drop alternate colors into prepared pan until 2/3 full and swirl together. Bake for 40-45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.

Meanwhile, to make the buttercream, beat butter and powdered sugar together until pale and fluffy. Gradually beat in milk, food coloring and extract. Spread over cooled cake.
