Start by peeling 4 sweet potatoes. Dice em' up into 1 inch cubes. Lay them out on a baking sheet, season with salt and pepper to taste and drizzle with olive oil and maple syrup. Bake at 375F for 1 hour.

When you've only got 20 minutes left, add your bacon to the oven (I baked it on a broiler pan).

While your goods are baking, slice a large red onion and saute in a hot skillet with more olive oil and maple syrup. Season with salt and pepper. Saute until the onions are softened.

Then, in a large bowl, combine your onions with the dijon mustard and your roasted sweet potatoes. Crumble up half of your bacon, add it to the bowl, and start mashing. Sprinkle in some freshly grated parmesan cheese and continue mashing until desired consistency. Top with remaining bacon and more cheese.
