Rinse the glutinous rice thoroghly in several changes of cold water, until the water runs clear, then leave to soak overnight in a bowl of cold water.

Drain the rice and spread in even layers in a steamer lined with a cheesecloth. Cover and steam for about 20minutes, or until the grains of rice are tender and tasty

Meanwhile, reserve 3tbsp of the top of the coconut milk and combine the rest with the sugar and salt in a saucepan. Bring to the boil, stirring until the sugar dissolves, then pour into a bowl and leave to cool down

Turn the rice into a bowl and pour over the coconut mix. stir and leave for about 10-15 mins.

Peel the mangoes and cut the flesh into slices. Place on top of the rice and drizzle the reserved coconut milk over the top of the dish. Decorate with strips of lime rind.
