Ingredients: 4.5 cups Rye flour; 2 cups Light brown sugar; 3/4 cup Honey; 3 pieces Eggs; 1 piece Egg for glaze; 3.5 cups Ground nuts; 1 teaspoon Baking soda; 1 tablespoon Lemon zest; 1 tablespoon Orange zest; 1 teaspoon Allspice

4.5 cups Rye flour
2 cups Light brown sugar
3/4 cup Honey
3 pieces Eggs
1 piece Egg for glaze
3.5 cups Ground nuts
1 teaspoon Baking soda
1 tablespoon Lemon zest
1 tablespoon Orange zest
1 teaspoon Allspice

Mix all the dry ingredients in a bowl.

Make a well in the center, add eggs and honey and mix with your hands.

Cover, set aside for 12 hours (or refrigerate overnight)

Roll out dough and cut with cookie cutters and preheat oven to 300 F

Place on a cookie sheet, greased with coconut fat

Brush with egg wash and bake until done (I like them slightly springy to touch), let cool and decorate with almonds and candied fruit.

Optional icing: Beat 2 cups of powdered sugar with juice of one lemon and white of an egg. Place in bag, cut small hole in corner and squeeze the bag to decorate.
