In large bowl, combine salt and sugar. Next, add the six cups of water and stir to combine. Then add the raw fries and let them soak in this mixture for 10 minutes.

Then, place cooking oil in a large skillet and heat on medium-high. When oil becomes hot, add french fries and cook until slightly golden (don't crowd the pan-do this in batches if needed). Shake excess water from fries before cooking to reduce risk of burns. When they are done to your liking remove them from the oil using a spatula or slotted spoon and drain in a strainer or on paper towels. Repeat until all fries are cooked. Turn down temperature if fries begin to cook too fast. If desired, sprinkle with salt before serving.
