4 Tbsp. olive oil
4 skinless cutlets
1 beaten egg
1 c. seasoned bread crumbs
1 (10 oz.) can chicken broth
1/2 lb. mushrooms, sliced
3 Tbsp. margarine
2 Tbsp. minced parsley
2 Tbsp. minced basil
1 clove garlic
2 whole, large scallions
salt and pepper
3 Tbsp. white wine

Dip cutlets in egg and then bread crumbs.

Saute in oil on medium heat 3 minutes one each side.

Place in baking dish.

Heat margarine and saute garlic, scallions, parsley and basil for 2 minutes.

Add thinly sliced mushrooms and continue to saute another 2 minutes.

Add broth and wine; cover and simmer 10 minutes.

Season with salt and pepper.

Pour sauce over cutlets. Bake at 350u00b0 for 15 minutes or until done.
