1-2 tbsp oil
4 rolls ciabatta, sliced in 1/2 horizontally
8 tsp store-bought mango chutney
3 cups arugula
2.5 oz goat cheese, sliced

Combine ground beef, diced onion, mustard, egg and soaked bread and season. Form into 4 burger patties. Heat oil in a large frying pan, add burgers and sear for 8-10 mins, turning.

Meanwhile, spread ciabatta with a little chutney then add some arugula leaves. Place a burger on top, add goat cheese, red onion and more chutney, to taste. Serve.
