Dry Lupini beans can be difficult to find.

I found them at a local Italian Market.

They look like oyster crackers when dry.

You want to rinse them, then soak the beans overnight in a cold place adding enough water to cover the beans.

The next day, drain them and then boil them for about 1 hour in fresh water.

Then drain, cool, and cover with water again and let them sit for 7-10 days, CHANGING THE WATER ONCE A DAY.

This step is very important because these beans are very bitter and can be toxic if they are not soaked properly.

Fresh water each day is essential to draw out the bitterness.

Put them in a cool place for this.

I keep them in the basement; it doesnt have to be a refrigerator.

After about a week, test them to see if they are bitter.

When they are no longer bitter, put them in smaller containers and add plenty of salt (about 2 Tablespoons for 4 cups of beans or to taste).

These beans more than double in size, so you will have more than you think.

You can use any amount of beans, I just said 5 cups because that is how they were packaged where I bought them.

Eating them is fun because you pop the bean out of is shell, and only eat the inside.
