1 c. V-8 juice cocktail
2 tsp. red wine vinegar
2 tsp. hot sauce
1/2 tsp. oregano
1/2 tsp. garlic powder
1 lb. boneless cleaned chicken breasts
2 Tbsp. celery, chopped
2 Tbsp. green pepper, chopped
2 Tbsp. chopped onion
1 Tbsp. cornstarch

Mix V-8, vinegar, hot sauce, oregano and garlic powder. Marinate chicken breasts in this mixture for 1/2 hour; reserve marinade.

Place chicken breasts on microwave-safe plate and cover with plastic wrap; microwave on Medium-high for 10 minutes.

Place cooked chicken back into marinade and add celery, green pepper and onion.

Mix cornstarch into marinade and chicken until blended and place in microwave on High for 2 minutes.
