Lu'S Roast Beef

   Place roast in roasting pan. Bake at 375u00b0 for 1 hour.

   Place potatoes and carrots around roast. Combine remaining ingredients and 1 soup can of water in blender container.

   Process until smooth.

   Pour over roast and vegetables.

   Bake, covered, at 275u00b0 for 3 hours longer or until roast is tender.

   You may slice an onion, if you prefer, over the roast.
