1. Preheat oven to 350 degrees (325 for nonstick pans).

2. Sift together flour, sugar, cinnamon, salt, and baking soda into a bowl. Stir in oatmeal (see note below).

3. In large bowl, beat eggs briefly, and then stir in applesauce and vanilla.

4. Pour wet ingredients into the dry and fold until the entire mixture is wet. Do not overmix.

5. Pour batter into a large greased loaf pan (9 inch x5 inch).

6. Bake for 45-60 minutes until a knife inserted just comes out clean. Be careful to not over-bake!

7. Remove bread carefully from the pan and set on a wire rack to cool.

Note: optionally, you can add raisins and/or walnuts to this bread if you prefer. Mix them in with the dry ingredients in step 2.
