Lively Lemon Ice Cream Sandwiches

   Soften ice cream and mix in the lemon peel.

   Top 6 cookies with softened ice cream, about 1 tablespoons per cookie.

   Then top off with another cookie to make a cookie sandwich.

   Wrap the cookies sandwich in plastic wrap and refreeze until ready to eat.
