Start by cutting the brussel sprouts off the stalk right at the base of the sprout. Peel away any loose outer leaves. Toss sprouts into a pot of boiling water. Approximately 3 to 4 minutes. This will cook them but will leave the sprouts a bright green color. Transfer the hot sprouts to a bowl of ice water to stop the cooking. Add butter and onions to a large skillet. Cook till most of the onions are clear and some have carmelized and browned. Cut the brussel sprouts in half from top to bottom. Toss into the pan with the onions. Increase the heat to medium high and cook for several more minutes. Salt and pepper to taste, while the brussels sprouts are cooking. Do not overcook! Toss in the minced garlic at the end of cooking then remove from the heat. Squeeze the lemon into the sprouts and toss. Transfer to a serving dish. Enjoy.
