2 cups dry lentils
2 cups chicken broth
1 taco seasoning pouch, or you can make your own!
1 yellow onion small, chopped

["In a large soup pot, bring 2 cups of chicken or vegetable stock to a boil. Once your water is boiling, add in your lentils and reduce heat to low. Cover and simmer for 30 to 35 minutes.", "2. In the meantime, chop your onion, sweet potato and garlic. Add to a sautee pan that has been heating with olive oil over medium heat. Sautee over medium for a couple of minutes, then turn the heat down to medium low.", "3. Prepare your guacamole. Smash your avocado, add in your tomato and seasonings, and add in your cilantro. Set aside.", "4. Check your lentils, they should be tender. Drain and add to your sweet potato and onion mixture. Add into your taco seasoning. Sautee for a few minutes.", "Sautee for a few minutes.
