Lentil Salad With Feta Cheese & More- Peggy

   1.Put vinegar, mustard, cumin, sugar, and salt and pepper to taste in a small dish and stir until salt dissolves. Add olive oil and mix well.

   2. Add dressing to warm lentils and set aside to cool to room temp.

   3. Dice onion and peppers. Seed and chop the jalapeno pepper. Mince cilantro.

   4. When lentils are cool, add the vegetables and mix gently. Fold in cheese just before serving.

   Best if served the next day.
