4 lb roaster/fryer chicken
1 envelope dry Italian dressing
1 tsp seasonings salt (like Lawrey's)
2 1/2 tsp ground black pepper
2 1/2 tsp dry mustard
2 tsp granulated garlic
3 tbsp olive oil, divided
2 tbsp Butter, melted
1 juice of one lemon
1 small lemon, halved
1 small sweet onion, quartered

Mix all dry ingredients in a small bowl.

Wash chix & pat dry, place incontainer.

Rub the chix with approximately 1Tbsp oil.

Massage the dry ingredients into the chix and under the skin.

Don't forget the under side and in the cavity.

Cover and refrigerate overnight if you have time.

Preheat oven to 350 Place chix in Dutch oven.

Place lemon halves and onion quarters inside chix cavity.

Mix melted butter, 2T oil & lemon juice.

Drizzle mix over chix, massage in gently.

Bake for 1 1/2- 2 hrs basting every 30 mins and once more before serving.
