In a large bowl, beat butter and sugar until light and fluffy. Add the egg, combine thoroughly. Scrape down the bowl to ensure that it is fully incorporated. Add the extracts and lemon zest and mix to combine. Add the flour mixture in half cup increments, scraping the bowl after each addition.

Roll dough into 1-inch balls and set them on the baking tray, spacing them about 2 inches apart. Sightly flatten with the back of a spoon.

Bake at 350 F for 10-12 minutes or until barely browned on the bottom. Remove from oven. Allow to cool on the pan for 2 minutes before removing to finish cooling on a wire rack.
