¼ cup lemon juice
½ cup cold water

3 egg whites
¼ cup sugar
¼ teaspoon cream of tartar

Combine cornstarch, salt, sugar and cold water together in a medium sized saucepan.

Gradually stir in boiling water.

Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.

Mix a little of the hot mixture into egg yolks.

Remove from heat; add butter, lemon juice and lemon rind.

Cool slightly, then pour into baked pie shell.
