Preheat oven to 350.

In an electric mixer on medium, beat eggs, milk, lemon extract, sugar and oil until well blended.

On low speed, add flour and baking powder.

Mix until just blended.

The dough should be sticky and soft.

Lightly dust the dough and your fingers with a little additional flour.

Drop the dough from a teaspoon onto a lightly greased cookie sheet, spacing them 2 inches apart.

Bake immediately for 8-10 minutes or until slightly browned.

Remove cookie sheet from oven and using a metal spatula remove the cookies form sheet onto wire racks and cool completely.

If it is necessary to freeze the cookies, use a heavy duty freezer bag and freeze the cookies unfrosted.

You may also want to freeze them in a air tight container placing wax paper between layers.

LEMON CONFECTIONS' FROSTING:.

6 cups confections sugar.

1/2 cup water.

2 teaspoons lemon extract.

In a mixer on medium, beat all ingredients until smooth.

Frost the tops of the cookies.

The frosting will drip down the sides of the cookies (it's OK).

Dry the frosted cookies on a wire rack.

Stor in air tight container make sure to place wax paper between layers.
