Ingredients: 2 small zucchini sliced into half moons (about 4 cups); 1 tsp lemon juice; 1 tsp dried oregano; 1.5 lbs Bone in Chicken Thighs or Drumsticks; 2 Tb Olive oil; 1/2 cup diced onion; 4 cloves garlic; 1.5 Tb capers, rinsed and drained; 2 tsp lemon zest; 1 cup Arborio rice; 2 cups low-sodium chicken broth

2 small zucchini sliced into half moons (about 4 cups)

1 tsp dried oregano
1.5 lbs Bone in Chicken Thighs or Drumsticks
2 Tb Olive oil
1/2 cup diced onion
4 cloves garlic
1.5 Tb capers, rinsed and drained
2 tsp lemon zest
1 cup Arborio rice
2 cups low-sodium chicken broth

Preheat oven to 400 degrees. Toss squash with lemon juice, oregano salt and pepper. Set Aside

season Chicken with S&P. Heat 2 TB oil in skillet over medium high heat. Add chicken and brown on both sides. Remove to a covered plate

Sautee Onion in skillet about 2 mins, add capers, cook 1 min. Stir in Lemon zest, rice and broth. Bring to a boil

Nestle chicken in rice and top with squash. Cover with lid & transfer to Oven, Bake 30 minutes

Remove lid and bake 10 more minutes until broth is absorbed and chicken reads 165 degrees.

Let rest 5 minutes covered, then serve.
