1. Preheat oven to 400deg F. Remove giblets from chicken and rinse thoroughly with cold water. Pat dry inside and out with paper towel.

2. Put chicken in roasting pan and season all over with the juice of one lemon, then salt and pepper. Halve two lemons and stuff into cavity.

3. Place chicken breast side down on rack in roasting pan.

Turn oven down to 350deg and roast for 15 minutes.

4. Peel and quarter onions. Cut other vegetables into bite size pieces.

5. After 15 minutes, remove chicken from oven, turn it over so it is breast side up, add vegetables around chicken and insert meat thermometer into thigh. Return to oven and cook until temperature reached 175deg.

6. Remove from oven and let sit for ten minutes. Carve and serve with vegetables.
