Leftovers Sausage Casserole

   Preheat oven to 180C.

   Heat a flameproof and oven-safe casserole dish (use one that has a lid youll use the lid later) on medium.

   Add oil.

   Fry onions and garlic until soft and mostly cooked.

   Add thyme and cook until fragrant.

   Add carrots and potatoes and stir until they are warmed and carrots are softened.

   Add tomatoes; stir to combine.

   Dissolve gravy powder in the boiling water and add it to the pan.

   Note that more water or gravy powder can be added to change the consistency.

    Add sausages and parsley.

    Put lid on the pot and transfer into oven.

    Cook for approximately 45 minutes, then add frozen peas.

    Cook for another ten minutes or so until peas are hot.

    Serve with mashed potato.
