Wash jalapeno and cut into small pieces then make sure you also have the onion cut up into small pieces.

Add the jalapeno, onion, roast beef and potatoes into a pan with olive oil then add all of your seasonings.

Put heat on medium low and cover until potatoes are soft make sure you stir so it doesn't burn or stick.

Whenpotatoes are done 30 minutes later add the eggs stir until eggs are done nice and fluffy.

Heat tortillas then add your roast beef with potatoes and eggs add cheese if you desire.
