Beat egg yolks and sugar together in a small bowl with electric mixer until pale and creamy. Add chopped cream cheese, sour cream and vanilla and beat until smooth; transfer to a large bowl.

Beat egg whites until soft peaks form and fold into cream cheese mixture.

Combine coffee, extra sugar and hot water in a bowl, stir until dissolved. Dip biscuits into coffee mixture, one at a time, and place a layer of biscuits into a serving dish. Pour half the cream cheese mixture over biscuits, top with another layer of biscuits dipped in coffee mixture; pour remaining cream cheese mixture over biscuits. Top with another layer of biscuits dipped in coffee mixture and refrigerate overnight.

Decorate with cream and grated chocolate and dust with sifted cocoa.
