Combine ground lamb, feta, breadcrumbs, lemon peel, garlic and 2 tbsp of the mint in a large bowl. Season. Shape mixture into 4 patties. Cover with plastic wrap and refrigerate for 15 mins.

Line a baking pan with parchment paper. Place sweet potato fries on pan. Bake according to package directions.

Meanwhile, heat a large skillet on medium heat. Spray patties with no stick cooking spray. Cook for 6-7 mins each side, or until cooked through. Let stand, loosely covered with foil, for 10 mins.

For the tzatziki, whisk yogurt, cucumber, lemon juice and remaining 2 tbsp mint in a medium bowl. Season and set aside.

Preheat the broiler to medium. Spray bread with cooking spray. Broil for 2 mins each side, or until lightly toasted.

Spoon tzatziki over 4 slices toast. Top with tomato, beets, patties, spinach and remaining toast. Serve with sweet potato fries.
