For the Burgers: Using your hands, combine lamb, egg, oregano, cumin, and most of the garlic in a large mixing bowl. Season with sea salt and black pepper. Roll into 4 even patties, flatten and place on a baking sheet.

Make the Tzatziki: Place grated cucumber on a tea towel. Pull corners of towel together and wring out cucumber over sink to remove excess water. Place in small mixing bowl with yogurt, mint, and remaining garlic. Stir to combine. Season with salt and black pepper to taste. Chill until ready to serve

Preheat a griddle pan on high heat. Spray burgers and onion slices with olive oil spray and place in pan. Cook for 2-3 mins each side, until cooked through. Remove from pan and cover to keep warm.

Spray halloumi with olive oil spray and cook for 2 mins on each side until golden. Remove from pan and cover to keep warm. Place bread in pan and cook for 30-60 seconds each side to lightly toast.

Place base of toasted bread on each plate and spread with tzatziki. Add spinach leaves, burger, and halloumi. Top with onion and remaining slice of toasted bread.
