*Boil and drain noodles (do not overcook). Toss with butter and let cool slightly. Beat egg yolks with fork and add to noodles. Make sure the noodles are not too hot or the eggs can cook. Stir together cinnamon, sugar and salt. Add to noodles. At this point, you can add the chopped apples if you are using them.

*Beat egg whites with mixer until stiff but not dry. Egg whites should form a peak when you pull the beater out not a hole. Fold into noodle mixture.

*Layer 1/2 noodles into greased 13x9 inch pan. You can use butter or spray. Put a layer of applesauce. Top with the rest of the noodles.

*Bake at 350 degrees for about 45 minutes, until top is golden brown
