Knishes

   Mash potatoes. Add salt, pepper. Saute thin slivers of onions (about 1 onion per lb. of potato) in chicken fat. Mix in evenly with mashed potatoes.

   Meanwhile, prepare any bread dough. Roll out thinly, cut in squares, fill with potato, and cover with another square, like ravioli. Seal edges together. Place on greased pan, brush tops with milk, bake 350-375u00b0 until golden brown.

   For mashed potatoes: wash, pare and cook 6 medium or 2 lbs. potatoes, 25 to 30 minutes or until tender. Drain and mash. Whip in 3 or 4 Tablespoons butter, 1/3 to 1/2 cup hot milk or cream, salt, pepper, paprika, cayenne. Add in a little chicken fat from sauteed onions.
