Mix the egg yolks with the condensed milk. Add the lime zest and juice. Pour into the pie plate and bake 25 minutes, until firm. Let cool and refrigerate, overnight if possible.

Place the water and sugar in a saucepan and cook together until 120 C, approximately 10 minutes, without stirring.

Beat the egg whites with a pinch of salt until stiff. Add the sugar mixture little by little to the egg whites and continue to beat until cool and compact.
