1) seperate goat cheese log into 3 equal sections and roll into balls and flatten tops, dip in egg mixture and then into breadcrumbs, repeat with two remaining balls and freeze for at least one hour

2) in saucepan heat to med-high 1/4 cup of oil, 1/2 cup of minced garlic, stir and simmer 5 minutes and then add 1 cup of honey and stir in 1/2 cup of curry powder, 2 tablespoons of mustard and 1 tablespoon of garlic salt, simmer for 20 minutes and take off heat. Squeeze a splash of fresh lemon juice into sauce and pour into bowl. Refrigerate for 1 hour.

3) When sauce has been refrigerated for 1 hour deep fry frozen fritters on 350 degrees for 2-3 minutes

4) Drizzle on goat cheese fritters and place slices of cucumber and lemon as garnish. Serve extra sauce in serving bowl as dip for cucumbers of other vegetables!
