In a large bowl combine extra-lean ground turkey, onion, kale, parsley and gluten-free breadcrumbs and mix carefully.

In a medium bowl, lightly beat the eggs.

Add the spices and mix well.

Pour the wet ingredients into the meat mixture bowl.

Use your (clean) hands to mix everything together and roll the mixture into your preferred size meatballs.

Put a baking rack into a rimmed baking sheet and place the meatballs on the rack.
