Immediately on taking cake out of oven, spread towel on top, sugar side down.

Flip cake over right away and peel off parchment paper.

Roll came and towel into a tight roll short side to the end.

Set aside tightly wrapped until fully cooled.

Once cool, unwrap gently and spread preserves evenly and generously.
