4 Japanese eggplants
4 eggs, beaten
2 cups flour
2 cups panko breadcrumbs

2 tablespoons oil
1 tablespoon fermented black beans, rinsed

2 tablespoons shaoxing wine
½ cup chopped clams with juice
1 ½ cups chicken stock
4 tablespoons oyster sauce
¼ teaspoon salt
⅛ teaspoon white pepper
roux, Cornstarch
1 teaspoon sesame oil
tomatoes, diced
green onion, minced

With a shape knife cut down the length of the eggplant to form a fan.
