Place the bread cubes in a lightly greased 8 X 8 baking dish, set aside.

In a large skillet, over medium heat, saute the onion until translucent. Add the Italian pork sausage over medium heat. Add the sausage and cook until and sausage no longer pink. Drain. Spoon drained sausage and onion mixture over the bread cubes. Sprinkle with cheddar cheese and mozzarella cheese.

Whisk eggs, milk and Italian herbs in a large bowl. Pour over the bread mixture.

Cover and refrigerate over night.

Remove from the refrigerator 30 minutes before baking. Uncover and bake in a 350 degree oven for 50 - 55 minutes or until a knife inserted near the center comes out clean.

Let the casserole stand for 5 minutes before serving.
