Italian(ish) Cheese-stuffed Turkey Breast

   Preheat oven to 350 degrees.

   Pound fillets with a meat mallet.

   Sprinkle one side of the fillet with some Mixed-up Salt, just a little will be sufficient.

   Spread a cheese wedge onto each fillet (one wedge per fillet).

   Roll the fillet with the cheese.

   Secure with a toothpick, if necessary.

    Sprinkle Italian breadcrumbs onto a plate.

    Roll each rolled fillet in the breadcrumbs for a light coating.

    Place rolled fillets into a lightly greased (with Pam or other cooking spray) dish.

    Lightly drizzle fillets with olive oil.

    If you want, you can sprinkle fillets with a few more breadcrumbs.

    Place the dish into the oven and cook for 30-45 minutes, until the turkey is no longer pink.

    I cooked mine at 350 degrees for about 20 minutes, then turned it up to 400 for the last 10 minutes.
