Sieve the whole wheat flour and setting aside half of the bran in the sieve, add the rest back into the flour. Mix the whole wheat flour, all purpose flour, salt, sugar and baking soda. Add the butter and rub it into the flour mix with your fingertips until it is like fine breadcrumbs. Pour in 1 1/4 cup of buttermilk and knead to a smooth dough. You may want to add some extra buttermilk, if the dough is too dry.

Preheat the oven to 400u00b0F. Form the dough into a round loaf shape and place on a baking tray lined with parchment paper (12 inch X 15 inch). Using a floured knife, cut the bread crosswise with a 1/2 inch deep cut. Then push a floured spoon handle in the cuts. Sprinkle the bread with water and sprinkle with the bran sifted with the sieve.

Place on the second rack to the bottom of the oven, and bake for 30-40 minutes.
