Preheat the oven to 325u00b0F. Line 2 baking sheets with parchment paper. For the florentines, mix corn flakes, cherries, raisins, almonds and condensed milk in a bowl. Drop rounded spoonfuls of mixture onto prepared pans, allowing room for spreading.

Bake for 10-12 mins or until light golden brown. Cool in pans on wire racks.

Meanwhile, melt chocolate in a bowl over a saucepan of simmering water (do not let bowl touch water). Remove bowl from pan. Cool slightly. Spread chocolate on flat side of each florentine. Using a fork, create lines in chocolate. Place, chocolate-side up, on a wire rack to set.

For the Irish coffee, pour coffee into 2 heatproof serving glasses. Add whiskey and sugar; stir to combine. Top with whipped cream. Serve with florentines.
