1. Add some ice cubes into a large mixing bowl. Place a smaller mixing bowl inside it, so the bottom of the small one is in contact with the ice cubes. Place both bowls in the freezer.

2. Plug in your electric hand-held mixer so you have it ready when you need it. Add the chocolate and water (and sugar, if using) to a saucepan over medium heat and cook until melted, stirring regularly.

3. Once the chocolate is fully melted, remove the bowls from the freezer and pour the chocolate into the small one. Beat with the mixer until thick, about 5 minutes. If the chocolate gets grainy, pour it back into the pan and warm for a few minutes, until melted, before beating again.

4. Pour into individual ramekins, let cool, then refrigerate for 10 minutes, no more. Serve immediately.
