1.Peel the potatoes and cut it in a big dice form. (one potato can transform into 12-15 big dice)

2.Put the chillies,garlic,shallots,granulated sugar and shrimp paste on a mortar or a food processor.Pulse until combined but not smooth. Set aside.

3.In a depp fryer pan,put a lots of oil and deep fry the potatoes dices until golden brown. Set aside on a paper towel plate.

4.on a wok,take at least 5 tbs of oil from the deep fryer and heat it. Put in the chillies ingredients,sauteed it until fragrance.

5.turn the fire to medium heat,add the potatoes inside along with palm sudar and salt. Stir it until well combined and the red colour from the chillies begin to coated the potatoes.

6.At last,add the lemon basil and keep sauteed it for another 1 minute. turn off the heat and serve.
