Sandwich assembly: Spread about a tablespoon of peanut butter carefully over one side of a cookie and about one tablespoon of chocolate sauce over one side of another cookie. Spread a big scoop of softened ice cream over the peanut butter side of the cookie, carefully. Top with a chocolate-coated cookie. Wrap in plastic wrap or foil and place in the freezer until ready to serve. Repeat with remaining cookies.

Note: if you don't have ice cream topping (like me, I never remember to buy any!), make some really quick by microwaving 1 cup chocolate chips and 1/2 cup of milk in 30-second intervals. In my microwave, it took 1 minute total. And you have chocolate sauce!

Enjoy!
