Hot New Potato Salad – a delicious recipe with red new potatoes, bacon, snow pea pods, mustard, red onion, cider vinegar. Easy to follow and perfect for any occasion.

Servings: persons

1 lb. red new potatoes
1/2 lb. fried bacon, crumbled
1 pkg. snow pea pods
6 Tbsp. Dijon mustard
1/4 c. red onion
3 Tbsp. cider vinegar
salt
pepper
1/4 c. carrots, grated
dash of garlic

Boil potatoes with skins on in water until tender.

Drain. Fry bacon until crisp, then drain but save grease for later. Crumble bacon.

Sprinkle bacon over potatoes.

Add onions and carrots and stir.

In saucepan, mix cider vinegar, mustard and bacon grease.
